Mix besan, water, and food color together until it reaches a flowy consistency.
Fry this batter in oil on medium flame until cooked, taking care not to fry on high flame.
Remove the fried batter onto an absorbent towel and let it cool completely.
Once cooled, grind the fried batter into a coarse powder.
In a pan, add sugar and water, and cook it until it reaches a thin string-like consistency.
Add cardamom powder and the ground besan mixture to the pan.
Cook the mixture on low flame for 5 to 8 minutes until all the sugar syrup is absorbed.
The mixture will start to come together; add melon seeds and 1 tsp of ghee.
Let the mixture cool a bit.
Shape the mixture into modaks or laddoos for a festive vibe.
