Instructions
1: Par-boil the potatoes until just tender, then peel and cut them into cubes. 2: Heat oil in a pan on medium heat. 3: Add asafoetida and cumin seeds and let them splutter. 4: Add curry leaves, green chillies, and ginger. Sauté for 30 seconds until fragrant. 5: Add the par-boiled potato cubes and gently mix. 6: Sprinkle salt, red chilli powder, cumin powder, coriander powder, black pepper, turmeric, and crushed kasuri methi. 7: Toss everything well so that the potatoes are coated evenly with spices. 8: Cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly crispy and golden. 9: Turn off the heat, then add lemon juice, chopped coriander leaves, and chaat masala.
