A festive treat made from besan and flavored with cardamom, perfect for Diwali. These ladoos are shaped and can be dusted with edible gold glitter for a festive appearance.
Mix besan, water, and food color together until you have a flowy consistency.
Fry this batter in oil on medium flame. Do not fry on high flame.
Remove fried batter on an absorbent towel and let it cool completely.
Grind the cooled batter to a coarse powder.
In a pan, combine sugar and water, and cook until a thin string-like consistency is reached.
Add in cardamom powder and ground besan mixture. Cook this mixture on low flame for 5-8 minutes until all sugar syrup is soaked up.
Once the mixture comes together, add melon seeds and 1 tsp ghee. Let the mixture cool a bit.
 Shape the mixture into ladoos.
Optionally, dust with edible gold glitter for a festive look.
